Mountain yuzu is a semi-sweet, low-ABV sake-based beverage from one of the oldest and most prestigious breweries in Kochi prefecture, founded in 1603. It’s crafted with a base of Junmai Sake cut to 8% alcohol and fresh yama yuzu juice, offering a refreshing, crisp taste and zesty mountain citrus aromas. Tsukasabotan, meaning “King of Peony”, is a prestigious and storied brewery. The brewery, once the private establishment of feudal lord Shigeyoshi Fukaoizuminokami, is nestled in a valley within the Shikoku mountain range in the town of Tosa. Despite the variety of sakes now produced in the region, Tsukasabotan remains a traditionalist, creating dry, expressive sakes that complement the local sea-influenced cuisine. Its historical significance is such that it’s mentioned in Ryōtarō Shiba’s 1962 novel, Ryōma Goes His Way, set during the Meiji restoration.
