Take a walk on the refined side! This light sour evokes Moscato wine with thousands of pounds of white grape juice. Then things got a little unconventional when we added thiolized yeast – an innovative new strain primarily used in hazy IPAs to unlock aromatic tropical fruit notes in the hops and malts – to see how it would play in a sour sandbox.
The result is a delightfully crisp sipper the sweet/tart balance of sparling white grape juice with notes of tropical and stone fruits in the finish. This departure from our smoothie style roots reaped great rewards and we can’t wait to experiment with these innovative new yeast strains even more!
