Characterized by many as the definitive expression of the quintessential Irish style of whiskey, Redbreast Single Pot Still Irish Whiskey is created from a mash of malted and unmalted barley, which is then triple distilled in traditional copper pot stills and finally matured in a combination of first fill American Bourbon Barrels and first fill Spanish Oloroso Sherry Casks. The inclusion of unmalted barley into the mashbill, along with the tradition of triple distillation, is a uniquely Irish approach to whiskey production. Single Pot Still Whiskey, originating from a single distillery, was once the most sought after whiskey style in the world, but its popularity decreased during the hard economic times of the early 20th century. However, in recent years this style of whiskey has been revived, due to renewed interest from whiskey writers and enthusiasts alike, giving rise to demand for new expressions.
Redbreast 21 Year old is the finest representation of the signature Redbreast Sherry style. This is the oldest and richest expression of the Redbreast style that they have ever produced. The sherry cask aging is more apparent on the nose, with aromas of tropical fruits, roasted nuts and vanilla. The palate offers more depth than the nose suggests with rich, complex notes of dried fruit, honey, toasted oak, fleshy fruit and baking spice carrying through to an exceedingly long finish accompanied by a creamy mouthfeel.
